You can edit your stage dates directly from the revenue forecasting screen.
Click on the stage that you want to update your fee or stage length for in the left panel.
Then either change the fee in the pill, or in the right-hand panel choose a new end date.
Once you click out of the panel it will update the stage dates/fees
